Why I Love Vegan Pantry Meals
Today we’re rounding up some of my most-made recipes from the blog. Coincidentally, they’ve all based on pantry staple ingredients that I almost always keep on hand. I love pantry staple meals for a lot of reasons:
- They tend to be very affordable. Staple proteins in my diet like beans and lentils are super cheap and full of nutrients. They are usually very easy to find in a basic grocery store.
- Often times, they are flexible recipes. For example, if I’m making a grain bowl but am out of brown rice, farro or quinoa both work well as substitutes.
- This goes without saying, but many of the ingredients used are shelf-stable. I can keep things on hand for many months (looking at you, canned tomatoes) and just use them when needed.
- Pantry staple meals are usually very easy to meal prep. You’ll see a few casseroles featured below. They’re perfect for feeding a crowd or storing in your freezer for later.
